Shrove Tuesday is just around the corner. For some, Pancake Day is an opportunity to ditch the usual dinner and just eat pancakes for every meal and for dessert. And why not? Life’s all about balance after all.

Pancakes are also great for a pre-run breakfast, or a quick and simple protein and carb packed refuel after a long training run.

We all seem to love pancakes here at Great Run so we’ve pulled together some of our favourites  – from classic crêpes to protein-packed pancakes.

Ellie our Social Media Exec likes the good, old fashioned classic – a squeeze of lemon and a sprinkle of sugar. Ellie’s tip is to keep your batter thin so your pancakes come out light and crispy.


Customer Services Officer Elice’s favourite is a fruit-topped pancake, sliced banana, strawberries and blueberries.

But with pancakes, any fruit goes. So, whether you choose to pack in a berry punch with blueberries and strawberries, or go more exotic with pineapple and kiwi, brighten up your pancake plate with a handful of rich vitamin-packed fresh fruit.


When Vince our in house Designer is preparing for an early morning run he goes for a breakfast of banana pancakes. Adding bananas to the batter instead of flour means they’re gluten-free too.

Mash a banana and mix with beaten eggs and a pinch of gluten-free baking powder for a thick and fluffy pancake.


Anna one of our Event Managers likes to sprinkle sweetcorn onto the top of her pancake while it cooks. Then she flips it over to cook the other side so the sweetcorn goes nice and crispy.

If you’re not into sweetcorn try carrots or even sweet potato for a savoury option and to add some healthy vitamins and extra thickness to your recipes.


Bernardo who works on our Digital Communications likes to add vanilla or chocolate protein powder to his pancake mix to help with recovery after a long run (and they taste pretty sweet too). He replaces some of the flour with a scoop of protein powder. For extra protein, Bernardo tops it with a big dollop of Greek yoghurt.


Marketing Manager Helen’s topping of choice is Nutella. Her top tip is to warm the chocolate spread slightly so it’s nice and gooey and can be drizzled over your pancake.


Alex  our Operations Resource Director says his kids love a colourful rainbow pancake tower.

Divide your pancake mix into smaller bowls and add drops of different coloured food colouring gels. Serve them by stacking the different coloured pancakes on top of each other to form a rainbow tower.


Santhtosh from the IT Team also likes colourful pancakes, he chooses the colour theme of a favourite character.

Do you have a little unicorn fan? Use pink, purple, white and turquoise gels for a unicorn themed stack. Top with whipped cream, rainbow sprinkles and edible glitter and use a marshmallow twist for a horn.

Or maybe dinosaurs are more your kids’ thing? Add green and brown food colouring and top with chocolate chips and quartered strawberries for dinosaur scales and spikes.


Nicola from the Communications Team keeps it savoury with a cheese and ham pancake. She adds grated cheese and chopped ham to the batter while it is in the pan so it can melt through and cook into her pancake.


Dan from the Operations Team doesn’t like his friends to miss out on the lovely pancake goodness just because they are following a plant-based or dairy-free diet.

His easy vegan recipe uses self-raising flour, baking powder, soya milk and vanilla extract. He tops them with banana slices, blueberries and maple syrup.


Lisa from the Finance Team has a sweet tooth and for her pancakes are always a treat!

So be like Lisa and crack open the chocolate spread, sprinkle over some chocolate chips, drizzle salted caramel sauce and add a scoop of your favourite ice cream… anything goes!
